Meatless Monday Recipe : Broccoli Spaghetti Squash

Here is a really good recipe I saw on Pinterest. (Most of my recipes come from Pinterest BTW)

 

Ingredients:

1 Medium Spaghetti Squash

4-6 oz of Broccoli crowns

2-3 oz of your favorite cheese (shredded)

Salt and pepper to taste

2 tablespoons of feta cheese

 

Directions:

  1. Preheat oven to 400 degrees Fahrenheit
  2. Cut squash in half and clean out seeds
  3. Rub some cooking oil on the cut side of the spaghetti squash
  4. Use a lipped baking sheet of rimmed glass pan and place squash face down
  5. Start to steam or blanch the broccoli
  6. Roast for 30-40 min or until you can easily poke a fork through
  7. Allow squash to cool and then use fork to fluff the inside of the squash. (Should start to look like spaghetti noodles.)
  8. Add the rest of the ingredients
  9. Bake at 350 for 10 to 15 minutes
  10. ENJOY!
